I always find it interesting to see what people say about butter vs. margarine. I'm still at the point where butter is too expensive to always use as I am a medical student; however, all the cookies I make with butter are flat while the cookies made with margarine are not. This seems to be opposite from what most people say, but that is almost ALWAYS the case for me. Hmmmm. Sometimes I use a mix of the two and that works well.

Candace, I'm a real butter fan, too. However, my wife grew up with margarine, and I think butter is richer than she cares for a lot of times. I think a lot of things go back to what you grew up with in terms of taste. I'm also on a kind of kick to go back to pure foods: unprocessed sugars, real butter, eggs without hormones, etc).
