Thanks so much for your comment. I use the bread machine just because of time restraints... with three kids it is just easier for me. There isn't any reason whatsoever that this can't be done by hand. I hope you give it a try!

As far as high altitude, I really don't know the answer to that question... sorry! Hopefully someone will come along and read this and help you out.
