We made choc chip/oatmeal cookies tonight substituting apple sauce for the butter. They were just as delicious and everyone enjoyed them.

I just "stumbled" on your site. I like your ideas! I've become a big fan of Z-trim as a sub for butter in baked goods or things like salad dressing. They say you can sub it for 50% of fat. I've used it 100%, and depending on the item, with satisfactory to "can't tell the difference" results.

so i just made cookies, used one apple instead of the butter. i did add just a drizzle of olive oil to bind it all together a bit more. i have to say, they turned out delicious. i added oats, apricots, pecans, sunflower seeds and pumpkin seeds too.

so the fruit over butter is a definite yes!

A new website, cuttransfat.org is committed to the "voluntary" reduction or elimination of transfats by the food industry. There are links to many articles offering differing views on the subject. It is a quality site with lots of good information.

The site is also compiling a list of restaurants and food chains that are actively eliminating or reducing trans fats in their menus.
