Thinking Outside the Kashi Box
Kashi, the purveyor of the healthiest-sounding foods on the planet, have made their mark on the breakfast
table. But who knew they would hold up after dinner, too? My friend found their online collection of recipes and has been baking sinless sweets for weeks now. I’m sorry I didn’t discover it sooner–I might have avoided guilt the last time I made a batch of cookies!
Many of the Kashi recipes are sent in by loyal health nuts around the country and are quite daring in their scope. I would never have thought to put Kashi shake mix in my muffins, but Michael from Philadelphia took that leap. I personally favor the GoLean Apple Raisin Squares. They are cakelike in texture and a bit like blondies. They are neither overpoweringly sweet nor underwhelmingly healthy. If you’re looking for something to share with friends, this is a good pan to bring to a party, maybe along with a tub of frozen yogurt. Even though these aren’t quite granola bars, it seems like it wouldn’t be kind to top these bars with a scoop of ice cream.
And they would make a great breakfast the next morning…
GoLean Apple Raisin Squares

1 cup whole wheat flour
1/2 cup raisins
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 cup applesauce
1/2 cup turbinado sugar (or Sugar in the Raw)
1 egg plus 1 egg white
1/4 cup canola oil (or oil of choice)
1 teaspoon pure vanilla extract
2 cups apples, finely diced
