Video Learning: Mooncakes
Mooncakes are thin shelled pastries with a thick layer of dense fillings that are traditionally associated with the Chinese Mid-Autumn Festival. Fillings can include duck egg yolks, red bean paste, and lotus seed paste, all of which are traditional, but additional mooncake fillings have been introduced reflecting modern tastes and health concerns.
The overall process for making mooncakes is pretty straight-forward. Create the filling, roll it into a ball, wrap the crust around it, mold it into the desired shape, and bake. It is served sliced in small pieces, usually with tea.
At one point in China’s history, mooncakes were used to distribute secret messages, both inside the cakes and as part of the design molded onto the cakes themselves.
