Beginning Baker - Back Again!


Yeast rolls bakedI am back again!  I apologize for anyone that was reading any of my stuff and noticed I haven’t been posting.

To be frank, it’s been just too hot to bake in the house!  So what I’m writing about today is the anticipation of baking weather… Autumn!

The smells of yeasty dough, baking bread, melty butter on bread too hot to eat… That’s all part of the autumn season to me.  I’m anticipating some great bread this year, after all I learned last year, when I first started baking.  I have a Hearthkit in place in the oven, and my oven window, after a $225 replacement from cracking the glass, is ready to go.

Here’s what I’ll be doing differently this year:

More types of bread, including a good, dark, sweet pumpernickel and a miche or two

  • Stuffed breads
  • Cinnamon rolls
  • No-knead bread
  • More cinnamon rolls
  • A brioche or two
  • At least one apple pie

If you have anything you’d like a novice like me to try, let me know.  I’m up for about anything, as long as there’s no coconut in it!

seeing your beautiful buns reminds me of my batch of failed experiment yesterday. ;p
I am looking forward to the fall weather for bread baking too!

My wife may not appreciate you commenting on my beautiful buns! (sorry, couldn’t help it! :) )

One thing I learned with the buns was that, for some things, I may need to turn things in the oven for the most even baking, though convection/bake seems to help with that, too. The hearthkit I have should make a big difference, too, though I notice it takes quite a while to heat up to temp.

Send me some of your results, and I’ll post them here to show another baker’s goods… Then people can admire your buns, too!
