Surprise them all with a mustard pie

It is not very often that I get to punch the air with my little fists and perform a dance. Therefore, it might have been a strange spectacle, for any onlooker, a few days ago to see me doing so in the middle of the kitchen singing to word: tarte, tarte, tarte.
Of course the puzzled spectators did not have the script and could not guess that it was tarte with an “e” at the end and that I was referring to an old baking favourite. Simple to make and so delicious that you will have to bake 2 at once, as one is never ever enough. But, the primary reason for my glee was that I was going to contribute to “Just baking” (little punches in the air), that I’ll share preferred recipes with you (little dance) and the first one being “tarte à la moutarde” (little song)
Ingredients:
should make 6 people
300g shortcut pastry
3 to 4 tbsp Dijon mustard
200g grated cheddard (or gruyère)
3 medium tomatoes, sliced
pepper
method:
- pre-heat the oven to 200° C/400° F/Gas 6.
- roll out the pastry, butter a 25 cm round tin
- spread the mustard on the base, there should be enough to cover generously the base however too much will be overpowering, pepper that’s right no salt
- cover with cheddar (and a little more cheddar if you wish)
- place the slices of tomatoes on the cheddar
- bake for 30 minutes in the middle of the oven
