&lt;em&gt;Thanks for reading! Since the purpose of the vinegar in this recipe is to sour the half-and-half, I'd say you can safely use either one. You wouldn't want a strongly flavored vinegar such as balsamic or red wine, but a pale vinegar with a mild flavor is perfect, and the cider vinegar would add a touch of sweetness.&lt;/em&gt;
